New to Victoria

Hi fellow Victorians,
My wife and I have recently moved to Victoria from the ACT. Canberra was great for mountain biking, canyoning up at Bungonia (only an hours away) and rock climbing in the Brindabellas.
Being new to Gippsland, we're struggling to find good quality outdoor activities close to our new place. Obviously winter will bring snow to the mountains which will be great for skiing. We're also planning to do some walking and scuba diving at Wilson's Prom.

However, can anyone suggest any good summer outdoor spots in Gippsland? Preferably canyoning or mountain biking?
